I've always said (possibly not enough) that turkey is "the most important part of the most important meal of the year" - a special Christmas dinner demands a special turkey. And I believe our turkeys are very, very special. We raise traditional breeds to full adult maturity for a dense delicious texture. We dry pluck by hand & game-hang for two weeks in the traditional way, to guarantee a rich tasting, succulent meat. We never cut corners. Because I don't want our customers to be just 'satisfied' - I want them to be ecstatic!
